Sweet plums are poached in a hot vanilla syrup in this recipe from Andrew MacKenzie. The poached plums will pair beautifully with a soufflé or cheesecake, or simply with a bowl of ice cream.
Add the plums to a heat-proof bowl and set aside. Meanwhile, place the vanilla pod, lemon peel, water and sugar in a pan and simmer until the sugar has dissolved
Drizzle the syrup over the plums and set aside until the plums are soft and the syrup has cooled slightly. Serve with soufflé, ice cream, or your choice of dessert
