Quorn and sweet potato curry

To serve

Heat the oil in a saucepan and gently fry the onions for 5 minutes. After this time, add the garlic and sauté for 2 minutes

Add the curry paste or curry powder and cook for 2 minutes, stirring all the time. Add the sweet potatoes, tinned tomatoes and vegetable stock, cover the pan with a lid and simmer for 10 minutes, or until the sweet potatoes are nearly cooked and soft

Add the Quorn pieces and cook uncovered for another 10 minutes until the curry sauce has thickened and the Quorn is cooked

Serve with steamed basmati rice and mango chutney
