Preheat the oven to 140°C and line a baking tray with a piece of greaseproof paper

Whisk up your egg whites until they form stiff peaks

Add the sugar gradually, a spoonful at a time, whisking thoroughly after each addition. The mixture should look thick and shiny

Put heaped dessert spoonfuls of the mixture onto the prepared baking tray and bake for 30-40 minutes

Remove from the oven and leave to cool if you are making the dessert that day or, if you have time; leave in the oven (switched off) to cool in there overnight
