Forget flowers or boxes of chocolates – we reckon the best gift you can give mum on Mother's Day is a bit of peace and quiet. A lie-in and a hearty plate of food is a pretty unbeatable start to Mothering Sunday, so, whether you're cooking breakfast with little helpers in tow or taking over the kitchen at mum's, we hope this collection of breakfasts (or brunches, if it's a later start) will offer some inspiration. 

You'll find buttermilk pancakes you can load with fruit if she's got a hankering for something sweet, or savoury options like chorizo hash and Eggs Florentine if that's more her thing. Buttermilk pancakes

When it comes to unhurried breakfasts, there are few more satisfying than a towering stack of pancakes drenched in maple syrup and whatever toppings tickle your fancy. In this recipe, using buttermilk instead of regular milk adds a welcome tang and gives them an even fluffier finish. These are served with crispy bacon, but you can swap that out for whatever she's in the mood for; fresh fruit or a drizzle of chocolate, perhaps.

Chorizo and spaghetti squash hash

The rich pimentón-flavoured oils from the chorizo give this dish a gorgeous depth of flavour. The beauty of a hash means you can throw in whatever you have in the fridge, so this is one you can tweak accordingly. Finishing the dish with baked eggs adds an extra indulgence. We suggest serving it all warm with hunks of crusty bread for dipping in the soft yolks.

Eggs Florentine

Hollandaise sauce is often seen as tricky to master, but with a bit of patience and care it's easier than you might think and a brilliant sauce to have in your arsenal. This classic dish from Sally Abé is a combination of fluffy English muffins, spinach, poached eggs and the rich sauce, and makes a perfect weekend brunch. Swap the spinach for smoked salmon for Eggs Royale or ham for Eggs Benedict.

Sweetcorn fritters with slow roasted tomatoes and smashed avocado

Louise Robinson's beautiful sweetcorn fritter recipe involves slow-roasting the tomatoes the night before, but it's a straightforward process and means it's just a case of preparing the fritters in the morning. The end result is an impressive brunch dish and excellent vegetarian option, topped with smashed avocado and punchy tomatoes.

Cinnamon eggy bread

In this eggy bread recipe, Colin McGurran soaks his bread in a cinnamon cream and serves it with a drizzle of honey and dollop of yoghurt on the side. A filling, hearty crowd-pleaser, this can be on the table in twenty minutes and is ideal if you're making breakfast with mini helpers.

Papaya and chia breakfast bowl

Rosana McPhee's breakfast pudding is the ideal make-ahead breakfast. Make the pudding mix – with coconut milk, vanilla extract and chia seeds – the night before, leave it to set overnight and in the morning simply add your toppings of choice. Rosana's recipe uses a vibrant papaya purée, fresh fruits and nuts.

Creamy Dijon mushrooms on toasted brioche

Classic mushrooms on toast is taken to another level in this recipe, which adds sweet sherry, fiery Dijon mustard and fresh tarragon leaves. It's a simple dish but there's loads going on flavour-wise, and it can also be ready in just fifteen minutes. Sweet brioche is a great contrast to the savoury mushrooms, but you can use sourdough if you prefer.
