Elderflower honey

This elderflower honey recipe allows you to preserve the flavour of the little white flowers for the rest of the year – long after the season has passed. Use it however you would normal honey when you're after an essence of British springtime.
Method

Clean the elderflower head of any bugs and dead leaves

Submerge the elderflower in the honey. You can use the jar the honey comes in, but if you're using one of your own ensure it's sterilised before using. The flavour will transfer to the honey almost instantly, but gets a little stronger over time. If you prefer a milder flavour you can remove the sprig, but it's fine to keep it in there as you use it. The honey should keep indefinitely, but may crystallise over time (depending on the variety)
