Your friends will ask you for this recipe, guaranteed. The green goddess mayo is based on an American salad dressing of the same name – it’s creamy, full of herbs and tangy enough to hold up to the barbecued steak. One of my all time favourite sandwiches!

Once the barbecue is hot, cook the sirloin steaks for 1–2 minutes on each side (for medium-rare), flipping frequently to build up a nice, charred crust
3
Set the steaks aside to rest for 5 minutes while making the green goddess mayo
4
Place all the ingredients, except the mayonnaise, in a blender. Blitz together until smooth – you may need to add a splash of water to help get things moving. Decant to a bowl and stir in the mayonnaise, seasoning with a little salt and pepper as needed
5
To assemble the sandwiches, slice the cooked steaks into fingers. Cut the baguette in half then layer up with the green goddess mayo, steak slices and rocket leaves before cutting into sandwiches
