As much as we love classic sandwiches such as cheese and pickle, there are so many more creative possibilities when it comes to vegetarian sandwiches. A great sandwich is all about contrasts, so that's something to think about when you begin building your sandwich. Adding something soft and creamy, like a goats' cheese, against an ingredient that is crunchy and fresh - think crisp veggies and sturdy salad leaves - will always be a great combo.
It's also a good idea to mix up rich ingredients such as mayonnaise, or richly spiced spreads like harissa with fresher ingredients, to ensure you have a good balance. Dressing your salad leaves will add personality to a veggie sandwich, and make sure to explore options for adding herbal fragrance (e.g. pesto) and acidity (e.g lemon juice or pickles).
