Avocado and citrus salad

This avocado salad is a deliciously refreshing twist on guacamole, and makes a perfect accompaniment to fish or even a Summer barbecue. Bruno Loubet pairs crushed avocado with orange segments to create a perfect balance between creamy richness and zingy citrus.

Scoop the flesh of the avocados into a bowl and crush with a fork, making sure you keep hold of the skins

Season with the lemon juice and salt and pepper, then stir in the spring onions, olive oil and orange segments

Scoop the mixture back into the skins and serve immediately
