This refreshing elderflower and watermelon daiquiri is the perfect cocktail for a hot summer day. The Belvoir Farm elderflower cordial is used in the place of a simple sugar syrup, giving the drink a gorgeous floral sweetness, which is balanced perfectly with the cooling watermelon and zingy lime juice. To make a mocktail version of this drink, simply remove the rum.
Begin by freezing the watermelon. Remove the skin and chop into large chunks, then place in the freezer and leave to freeze for a minimum of 4 hours
Once frozen solid, transfer the watermelon chunks to a blender with the rest of the ingredients and blend on high speed until smooth. Don’t over blend as this will melt the drink
Transfer into 6 glasses and serve up immediately
