Frozen elderflower and watermelon daiquiri

This refreshing elderflower and watermelon daiquiri is the perfect cocktail for a hot summer day. The Belvoir Farm elderflower cordial is used in the place of a simple sugar syrup, giving the drink a gorgeous floral sweetness, which is balanced perfectly with the cooling watermelon and zingy lime juice. To make a mocktail version of this drink, simply remove the rum

  • 900g of watermelon, (no skin, seedless varieties are best)
  • 100g of elderflower cordial (1)
  • 2 limes, juiced
  • 300ml of white rum, (optional)

  • High-power blender

Method

Begin by freezing the watermelon. Remove the skin and chop into large chunks, then place in the freezer and leave to freeze for a minimum of 4 hours

  • 900g of watermelon, (no skin, seedless varieties are best)

Once frozen solid, transfer the watermelon chunks to a blender with the rest of the ingredients and blend on high speed until smooth. Don’t over blend as this will melt the drink

  • 100g of elderflower cordial
  • 2 limes, juiced
  • 300ml of white rum, (optional)

Transfer into 6 glasses and serve up immediately
