Watermelon is the ultimate summer cooler; it's crisp, full of fragrant melon flavour and packed with water, as the name suggests. When choosing a watermelon, look for the round patch where the melon has been resting on the ground: a white patch suggests an underripe melon, while a yellow patch is a sign that the fruit has ripened. It's also worth giving the melon a tap: a ripe watermelon will have a deep sound. Pass by any melons that have obvious signs of damage on the skin. 

While watermelon is delicious sliced and served straight from the fridge, it's also a versatile ingredient for many dishes, from salads and appetisers through to desserts. In recent years, it's even been suggested as a vegan alternative to roast ham

The perfumed, sweet flavour of watermelon matches well with salty flavours, such as feta cheese, halloumi and olives, and it's particularly good when dressed with fish sauce, lime and chilli. It can be blended into soups, smoothies and cocktails, although it is best blended just before serving, as the fruit and water will separate over time (stir to bring it back to its former glory). Watermelon also makes a stunning sorbet, ice lolly or granita for hot days.

Remember to always keep the rinds once you've used up all the flesh: they can be pickled and are excellent served alongside American barbecue dishes, grilled fish, or stirred through a salad for added pops of sweet-sour flavour.
