​​Roasted peach waffles with clotted cream and iced tea syrup

This simple, summery dessert brings together some of the most classic flavours of the American south: waffles, sweet tea and peaches and cream. With only about 10 minutes hands on time, this dish is perfect for making the most of perfectly ripe peaches with minimal effort.

Preheat the oven to 180°C/gas mark 4

Cut the peaches in half and remove the pit. Place them in a baking tray with the lemon juice, iced tea and thyme. Sprinkle a little brown sugar on top of each cut peach half

Roast for 30 minutes, or until the peaches are tender

Serve the roasted peaches on top of the waffles with a spoonful of clotted cream and some of the syrup from the roasting tin drizzled on top
