Greengage gin

This gorgeous golden greengage gin is a wonderful addition to any drinks trolley. Preserving the sweet plum's honey-like flavour in gin is the perfect way of making the most of the short season, and it makes a lovely homemade gift. If you fancy something a little more perfumed, try adding half a teaspoon of cloves or some orange rind.

Wash the greengages, slice them in half and remove the stones

Place the greengages in a clean jar along with the sugar and gin, then close the lid and give it a good shake

Leave to infuse for about a week. The gin will take on an auburn colour and a wonderful, almost molasses-like plum flavour

Strain the gin through a muslin cloth and transfer the gin to a clean bottle

Enjoy chilled and drink within 1 year. Once opened, store in the fridge
