A tangy and sweet condiment sauce that can be used whenever a recipe calls for thick balsamic vinegar. It is in the style of Italian ‘agrodolce’ meaning sour ‘agro’ and sweet ‘dolce’.

Use this glaze to garnish this fusilli bucati corti with raw tomato, peach and burrata dish.

Place the ingredients in a pan and whisk to combine

Place on a medium heat until it begins to gently simmer, stirring frequently

Reduce the heat to medium-low and let it gently reduce by half, stirring frequently

Remove from the heat and immediately strain through a sieve into a heatproof bowl. Transfer into a sterilised jar – if the glaze seems too thick, loosen with a little water
