- 1 lime, zested and juiced
- 1 egg yolk
- 1 tsp English mustard
- 250ml of olive oil
- 1 pinch of salt
SAVE RECIPE
Method

Place the egg yolk, lime juice, zest and mustard into a bowl and whisk for 1 minute. Add the oil in a thin stream whilst whisking continuously until thick and emulsified
- 1 egg yolk
- 1 tsp English mustard
- 1 lime, zested and juiced
- 250ml of olive oil

Season with a little salt, cover and store in the fridge until required
- 1 pinch of salt
