Pascal Aussignac uses Fisherman’s Friends sweets to add freshness to this fig petit four recipe. It gives it an unusual and unique flavour that will have guests trying to guess what it is.
Method

Put everything in a saucepan and gently simmer for one hour. Separate the juice from the figs and reduce until it becomes a thick glaze
- 20 baby dried figs
- 200ml of port
- 2 original eucalyptus Fisherman’s Friends

Add the figs back to the mix. These can be kept in the fridge in an airtight jar for 2 weeks

To serve, leave the figs at room temperature for 30 minutes. Arrange on your plate and drizzle the reduction on and around the plate
