Blackberry coulis

Try out our quick and easy blackberry coulis recipe to use up this years glut. This versatile sweet sauce can be drizzled over fruit or ice cream, or used to decorated cakes.

  • Blender

Method

Place the ingredients in a small pan and crush the berries a little

Simmer on a low heat for 5-10 minutes or until the berries are completely broken down

Taste, if the berries are particularly tart, you may want to add a little more icing sugar

Transfer to a blender and blitz to a smooth puree

Pass through a sieve for an extra smooth finish

The coulis can be reheated or served cold, it also freezes well
