Peter Gordon serves this baobab smoothie recipe at Providores, the ideal pick-me-up to go with one of his delicious fusion creations. Baobab powder is being hailed as a mighty superfood, and is well-loved by health food enthusiasts. More importantly, its sweetly sour, citrussy flavour is quite tantalising, especially when blitzed with blueberry purée and maple syrup in this dairy-free recipe.
Ingredients
- 1 tsp baobab powder
- 75ml of blueberry purée
- 150ml of soya milk, rice milk or almond milk
- 1 tbsp of maple syrup
- 2 tsp lemon juice
- 8 ice cubes

Method

Place all of the ingredients into a blender and blitz until smooth. To serve, pour into a tall glass with a straw
