Yoghurt sorbet

Gorgeous and delightfully creamy, this yoghurt sorbet recipe will be absolutely brilliant on a hot day. Christoffer Hruskova is known for his inventive ice creams and sorbets, and this one won't disappoint. Serve the yoghurt sorbet on its own, or pair it with a slice of cake or tart. You could even add some summer berries to play with a fun range of tastes.

  • Ice cream maker

Method

1
Make a sugar syrup by boiling together the water and sugar in a pan until the liquid has the consistency of a syrup
  • 75g of sugar
  • 75ml of water

Add the soaked gelatine leaf to the pan, then add the yoghurt and mix in with the rest of the ingredients. Churn in an ice cream maker and then store in the freezer until ready to serve
