
Robin Gill has taken inspiration from penne alla vodka for these rich loaded fries, with the addition of spicy 'nduja. The fries are tossed with lots of grated Parmesan then topped with the vodka sauce and creamy stracciatella. Lamb Weston’s Skin On Really Crunchy Fries are the perfect carrier of a sauce due to their 9% coating that allows them to stay crisper for longer.
Place a saucepan on a medium heat with the olive oil. Add the shallot and garlic and sweat gently until completely soft and translucent
Add the vodka and allow it to simmer in the sauce for a couple of minutes, then stir through the cream and Parmesan and cook until the sauce is rich, spicy and thick enough to coat the fries. Taste and season with salt and black pepper
Meanwhile, heat the vegetable oil in a deep pan over a medium-high heat, or preheat a deep-fat fryer to 175°C. Cook the fries until really crisp and hot through, then remove with a slotted spoon into a large bowl. Toss with the Parmesan then taste and season with salt
Pile the fries onto serving plates and generously spoon over the hot 'nduja vodka sauce leaving some fries exposed around the edge. Spoon over the stracciatella and finish with a drizzle of olive oil and plenty of black pepper. Serve immediately
