These breakfast baps are the ultimate way to start the day. Rounds of black pudding are stacked with chipotle mayo, fried mushrooms and a fried Freshlay Farms Golden Yolker® egg. The buns are toasted and brushed with dill butter for ultimate indulgence.
To make the mayo, combine the mayonnaise and the ground chipotle chilli powder
Toast the buns in a pan until golden brown and crisp
Rub the mushrooms with some oil and then fry in the pan until tender and browned
Fry the rounds of black pudding until crisp and cooked through, then fry the eggs
Spread the mayonnaise on the buns, then top with the mushroom, black pudding and fried eggs. Serve immediately
