Cannelloni di carne – beef ragù-stuffed cannelloni

This dish is the ultimate form of comfort food, making it perfect for those colder, darker evenings. Fresh lasagne sheets are stuffed with a rich ragù and topped with a generous helping of béchamel sauce and cheese to make for a real crowd-pleaser of a dish.

Orecchiette con cime di rapa

Orecchiette, named so after it's distinctive ear-like shape, is cooked simply with tenderstem broccoli, anchovy and garlic. A touch of chilli gives this simple, no-fuss dinner a kick, and a generous grating of pecorino helps finish off the dish perfectly.

Bolognese ragù

A classic ragù is a staple recipe and one of the most popular pasta sauces out there. Made traditionally with a mix of beef and pork mince, this dish requires plenty of time to cook gently, resulting in a rich sauce that is perfect with tagliatelle.

Tortellini in brodo

Making your own tortellini isn't a process to be rushed. Instead, use this recipe as an opportunity to while away an afternoon, or perhaps draft in the help of friends or family with a pasta-making evening. Once filled, these pork-stuffed pasta dumplings are served in a delicate homemade chicken broth.

Pasta alla Norcina

For a hearty, comforting dish, look no further than this classic dish hailing from Norcina. With a simple cream and sausage sauce, this recipe can be cooked up in under an hour, making it perfect for busy weeknights.

Pasta alla Genovese

This simple recipe is a classic Ligurian dish featuring pasta, potato and green beans. A homemade basil pesto keeps the dish fresh-tasting and coats the pasta in a silky sauce. This is a simple, low-effort meal, and can easily be made vegetarian too.

Cacio e pepe

Perhaps one of the simplest and most well-known pasta dishes to exist, this recipe requires only three ingredients and very little time. Pecorino and peppercorns make for a salty, moreish dish, with the addition of the cooking water making for an ultra silky coating that clings to the pasta.

Lasagne alla Portofino – pesto lasagne

Layers of pasta, homemade basil pesto, and rich béchamel make for an ultra comforting lasagne. This classic Ligurian pasta dish is simple to prepare and can be on the table ready to feed a hungry crowd within an hour. 

Sausage, tomato and mascarpone pasta

If time is too tight to allow for a slow-cooked ragù, opt for this cheat's version instead. Using sausage and tomato as the base with a generous helping of creamy mascarpone, this simple pasta dish is a staple recipe for any pasta lover.

Agnolotti del plin

Although slightly fiddly to make, these agnolotti are well worth the effort. Traditionally a celebration dish from southern Piedmont, these little pasta parcels are a lovely addition to a dinner party spread, and a great way to practice your pasta making skills.

Red pesto

Homemade pesto far surpasses anything you'll ever find in a supermarket, and in just 10 minutes you have a delicious pasta sauce. Less common than a classic basil pesto, this red pesto is made with sun-dried tomatoes and roasted red peppers.

Spaghetti alla carbonara

Another classic pasta dish, a carbonara is beautifully simple and very satisfying. Needing just a few ingredients, this dish can be whipped up in just 20 minutes and will be eaten even faster.

Chorizo, Iberico ham and tarragon linguine

Whilst not a traditional recipe, this dish is sure to become a regular part of your weeknight repertoire. Chorizo, shallots and plenty of garlic are cooked in a creamy sauce, combined with plenty of herbs and Iberico ham, and stirred through al dente linguine.
