Feta is a soft white cheese made from sheep's milk (or a mixture of sheep and goat's milk) and stored in brine, resulting in a distinctively tangy, salty flavour. It is one of – if not the most – famous culinary exports of Greece, and in 2002 was awarded PDO status to preserve its production methods and ensure the quantity of sheep's milk remains 70% or higher. Feta works equally well baked or served raw crumbled into a salad, and forms a staple part of a classic Greek salad recipe.
