To get the evening started, we thought we’d begin with some cocktails. While Marcus may be known as a chef rather than a bartender, he’s got some wonderful – and very festive – cocktail recipes as well, all of which were served at the Gilbert Scott. His mince pie Manhattan involves infusing bourbon with mincemeat, while for his mulled wine bellini he makes an intense mulled wine reduction with golden Nyetimber. It’s a great introduction to cocktail-making – clever and crowdpleasing.

It’s a wonderful and wonderfully simple recipe, but by no means Marcus Wareing’s only perfect pudding. For another elegant take on a classic, try making his decidedly not messy Eton mess, where a meringue shell is filled with a light mixture of raspberries and cream. His eccles cake on the other hand might raise a few eyebrows, since it’s served with a sweet and savoury cheddar-studded ice cream. A traditional if surprising combination, don’t knock it till you’ve tried it.
