Warning this post is only for the adventurous. We're at the start of Nose To Tail Fortnight. Running from 30th April - 14th May 2012 it is part of Ethical Eats campaign to encourage more thoughtful, less wasteful meat use.  We know that eco chef Tom Hunt is a strong advocate of issues around food wastage.  We asked him for a recipe that best promotes ethical meat use. Tom kindly shared his recipe of Sheep's Head with Cumin & Lemon  for Great British Chefs readers here....
