The restaurant and lively, atmospheric bar are modern, comfortable and friendly; this is a high-end establishment but the focus is on food rather than formality. A light, spacious interior with slouchy leather chairs is in keeping with the modern spa hotel it’s attached to, providing a pleasant city centre-esque foil to the charming greenness of the surroundings.
The food, too, is carefully designed, modern and innovative. Head Chef Steve Smith's skill lies in working with prime ingredients to create intricate dishes that bedazzle the palate. Technique and trend are followed closely, and the overall impression is of modernity giving an edge to the fine foodstuffs at the restaurant’s doorstep.
The wine list is almost equally divided between France and Italy and more far-flung destinations, with a competitive and extensive champagne list also available to browse. The cocktail menu ranges from old favourites to inventive bespoke drinks. Breakfasts at Bohemia are also lauded; if you find yourself visiting Jersey there’s every likelihood you won’t leave its grounds.
