Salsify in blankets

For a clever twist on pigs in blankets, this salsify in blankets recipe replaces small sausages with batons of the winter vegetable. The salty, fatty taste of the bacon works in perfect harmony with the creamy, nutty salsify, resulting in a knockout side dish.

Method

Place the lemon juice into a bowl of water. Peel the salsify, cut each baton into 3 pieces then immediately place in the lemon water (this will prevent discolouration)

Heat the butter in a pan and add the salsify. Cook in the foaming butter with a pinch of salt for 5 minutes or until al dente, basting and turning to achieve a nice even golden colour on all sides. Remove from the heat and allow to cool

Preheat the oven to 180°C/gas mark 4

Once cool enough to handle, wrap each piece of salsify in half a rasher of streaky bacon and place on a baking tray. Cook in the oven for 10–15 minutes or until the bacon is crispy. Serve
