Orange crisps

This orange crisp recipe by Shaun Rankin makes delightfully sweet orange slices, perfect for crumbling onto cakes and using to decorate desserts.

Ingredients

  • 1 orange, cut into slices
  • 200g of caster sugar
  • 200ml of water
  • 1 star anise

Method

Preheat the oven to 100°C/lowest gas mark

To make the syrup, combine the sugar and water in a saucepan and bring to the boil
  • 200g of caster sugar

Once the sugar has dissolved, remove from the heat and add the sliced orange
  • 1 orange, cut into slices

Add the star anise to the pan and cook for 20 minutes over a low heat, until the syrup is shiny and translucent. Remove from the heat and allow to cool

Remove the orange slices from the syrup and lay out onto greaseproof paper. Place in the oven for 3 hours to dry out completely, then remove and leave to cool before using
