How to de-seed a chilli

When de-seeding a chilli it is best to wear gloves, but if not remember to avoid touching eyes or body parts until your hands are thoroughly washed. If you add too much chilli to a dish, serve with something cooling like yoghurt, milk or crème fraîche.

Uses

Chillies can be used in a variety of ways, from main courses such as Paul Ainswoth's Chilli chicken pasta, meal accompaniments - Richard Davis makes a tasty Chilli Jam, and even in desserts, try Anna Hansen's Mango and chilli sorbet.
