From Indonesian nasi goreng to Thai pad krapow, there are so many ways to enjoy eggs that there's no reason to get bored making the same thing again and again. So, step up your cooking and out of your comfort zone with one of these eight delicious recipes!
For most people eggs + fried rice = egg fried rice. However, in Indonesia fried rice is generally often topped with a fried egg. This gives you all the best parts of rich fried egg white, plus the gooey yolk. Nasi goreng (nasi meaning rice, and goreng meaning fried) has countless variations, but is typically seasoned with shrimp paste and kecap manis, an Indonesian sweet soy sauce. For ours, we've amped up the egg factor with the extra addition of strips of omelette.
These cute, mini stacks of bubble and squeak are a scaled down version of the traditional dish. As ideal a use of Sunday leftovers as ever, this recipe is finished with a perfectly poached Freshlay Farms Golden Yolker® and a generous spoonful of homemade Hollandaise. If you've never made Hollandaise before, it's very similar to making mayonnaise but with butter in the place of oil. It's as decadent, rich and delicious as that sounds, and well worth the effort for a special brunch.
This dish is one for serious egg lovers, with a triple threat combination of omelette, fried egg and caviar. The potatoes and onions are slow-cooked in olive oil until soft and rich. The final flourish of a crispy fried Freshlay Farms Golden Yolker® and caviar gives this dish an extra special something, and a salty little kick to balance the decadence of the omelette.
Also known as pad kra pao, this spicy Thai stir fry is typically served topped with a fried egg. Although most of the ingredients are easy to find – pork mince, oyster sauce chillies – the key ingredient of holy basil can be a bit difficult to find. Luckily, Thai basil or Italian basil makes a great substitute.
The hilariously named huevos divorciados is made by serving two egg-topped tortillas alongside one another, one topped with salsa verde and the other with salsa roja. Sometimes the eggs are separated by a dividing line of refried beans, to stop them 'fighting' (or running into each other). Even without the fun name, this is a delicious vegetarian Mexican dish that's well worth making any time you can track down some tomatillos.
Salad Lyonnaise is a French bacon and egg salad traditionally made with curly frisée lettuce. It's served slightly warm, with hot bacon and eggs over fresh bitter leaves, and is delicious served with fresh bread to mop up the egg yolk and dressing.
Ham, egg and chips is a classic for a reason! One way to make it even better is, of course, to add mustard. The ham is coated in a simple maple glaze, and the fries are finished with rosemary salt.
Last but not least: split pea soup! This soup gets its vibrant colour from the yellow split peas and plenty of fresh corn on the cob. It's made with rich coconut milk, which helps balance out the heat of the Scotch bonnet chillies it's made with.
