It's only very recently that the UK has started to embrace African food. Just a few years ago our knowledge of the vast continent's cuisine centred almost entirely on the tagines and couscous of North Africa, and a vague knowledge that jollof rice was one of the most popular dishes in West Africa. Thankfully, that's now beginning to change.

African cooking is rich in spice, elevating simple ingredients into knockout dishes thanks to ingredients unique to the continent such as uda pods and grains of paradise (which both feature prominently in West African cooking). Ethiopian food has risen to the fore thanks to its delicious injera breads, topped with a variety of sauces and stews, while the vast influence North African cooking has had on southern European is becoming more and more understood.
