Stuffing – the unsung hero of the celebratory roast. Whether formed into balls, baked as a loaf or actually stuffed inside a bird, something pretty amazing happens when you throw a load of ingredients together, bind them and cook them in the oven. It also give home cooks the chance to show off a bit of culinary flair, with everything from apricots and apples to chestnuts and sausage meat up for grabs.
