Wild by name, wild by flavour

The immediately noticeable difference in the flavour of wild salmon makes choosing it an easy way of taking a salmon dish to the next level. This simple GBC Kitchen recipe sees wild sockeye salmon roasted in the oven with artichoke hearts and potatoes, and is finished with pumpkin seed pesto. Michael Bremner adds extra crunch to his recipe by frying the fillets in breadcrumbs in his recipe, while Lewis de Haas pairs his wild salmon with celeriac purée and wild mushrooms.
