Blue cheese filo bites with pears and pecan

Make sure these tasty vegetarian canapés are in your armoury over the festive season. Easily prepared in advance they can be whipped out to impress last minute guests.

There are so many great drinks occasions in December that it’s good to have a few simple finger-food recipes at hand. These vegetarian bites are always a crowd pleaser and go especially well with a glass of bubbly.

I like to prepare the filo bites in advance so that I only have to reheat them once my guests arrive. Any leftovers can easily be frozen, which really comes in handy when unexpected guests arrive.

Blue cheese filo bites with pears and pecan

Method

Preheat the oven to 180°C/gas mark 4

Drain the pears, cut into small cubes and set aside until needed

Cut the filo pastry sheets into small squares, so that they fit into the holes of a muffin tin

Melt the butter and use a little to grease one muffin hole. Lay a filo square into the hole, brush with more melted butter, then top with another filo square

Repeat the process one more time, so that you end up with three buttered filo layers

Lay a few pear cubes onto the filo pastry, so that the bottom is covered. Fill the remaining muffin holes with buttered filo pastry and pears

Once all of the muffin holes are filled, crumble some Stilton over the pears and decorate each filo basket with a whole pecan nut. Bake in the preheated oven for 15 minutes

Remove from the oven and allow to cool for 5 minutes before serving
