Vanilla crumpets with cinnamon cream

Vanilla crumpets

  • 2 tbsp of agave syrup
  • 1 tsp vanilla bean paste
  • 500ml of milk, slightly warmed
  • 7g of fast-action dried yeast
  • 100g of plain flour
  • 200g of strong white flour
  • 1/2 tsp bicarbonate of soda
  • 2 tbsp of warm water
  • butter , or oil, to grease the crumpet rings

Cinnamon cream

  • 150ml of double cream
  • 1 pinch of ground cinnamon
  • 1/2 tbsp of icing sugar, optional

To begin, add the agave and vanilla to the warmed milk. Tip in the yeast, stir well and leave for 5 minutes

Sieve the flours together
  • 200g of strong white flour
  • 100g of plain flour

Pour the milk mixture into the Vitamix container, add the flour and blend on Variable 2 until well-combined

Transfer to a large bowl and stir through to make sure all the flour is incorporated. Cover with cling film and leave in a warm place for 30 minutes

After 30 minutes, the crumpet batter will have risen and will be quite bubbly. Mix the bicarbonate of soda with the warm water, pour into the crumpet batter and stir. Cover again and leave for a further 20 minutes

  • 2 tbsp of warm water

Melt a little butter (or use sunflower oil) and using kitchen paper, wipe a little butter or oil over a large frying pan over a low heat. Grease the inside of the rings well, place the crumpet rings in the pan and pour in a ladle of batter. Cook for 5 minutes – bubbles should start to form and then pop. Carefully flip the crumpets over in their rings and cook for a further 2–3 minutes

Carefully remove from the pan and leave the crumpets to cool slightly before pushing them gently to release them from the rings

Re-grease the rings and heat again before repeating the process to cook the remaining crumpets

Add the cream, cinnamon and sugar (if using) to the Vitamix container and secure the lid. Select Variable 1, switch the machine to Start and slowly increase the speed to Variable 10. Blend for approximately 20 seconds until whipped

Serve the crumpets warm with a dollop of cinnamon cream and lashings of jam
