A traveller at heart, Nuno Mendes' cooking style reflects his interest in cultures around the world, with Japanese and Iberian influences perhaps most recurrent in his dishes.
While there are some easy dishes, such as this refreshing Yuzu jelly recipe, Mendes is known for his stylish molecular approach to cooking so many of the recipes in this collection are somewhat tricky. However, from his signature Lamb belly and milk skin recipe to the stunning White chocolate with lemon and grapefruit dessert it's clear that with a little extra effort you could create something truly spectacular.
