Fried rice is one of those dishes that is almost universally beloved. No matter what direction you take it in – simple egg fried rice or luxe XO fried rice – it’s sure to go down a treat.

Fried rice traditions vary around the world. In China, it’s usually served as a side dish, typically with soup and other meat or vegetable dishes. It’s often made with cured pork, prawns or egg. In the Philippines fried rice is a delightfully garlicky affair called sinangag. It’s often served for breakfast with fried eggs and spam or sausages.

The type of rice used for fried rice varies around the world, depending on what’s most commonly eaten for other meals. In Myanmar, Japan and Korea, fried rice is generally made with short grain rice, whereas in China, Indonesia and Malaysia it’s made with long- or medium-grain rice.
