Wylde Market is an online home for artisan producers

Wylde Market

Get to know online farmers' market Wylde Market, learn about its mission to connect us independent farmers, fishermen and artisans around the country and see how chefs put its produce under the spotlight in beautifully simple dishes.

Wylde Market aims to revolutionise how we buy food. An online farmers' market, it is the missing link between us and countless artisan producers around the country who we might otherwise struggle to find. The ever-changing platform is dictated by what fishermen have caught and farmers have harvested that week, enabling us to fill our cupboards and fridges with truly fresh, seasonal food, made by producers who are able to set their own prices.

Initially focusing on seafood, its remit has grown since it started in 2022, and today it stocks everything from Aberdeenshire miso and Kent kimchi to everyday staples like bread, eggs and milk, as well as a huge selection of meat from environmentally-minded suppliers. Wylde Market opens its digital doors at the weekend and stays open until Wednesday lunchtime, before orders are delivered nationwide at the end of the week. Ultimately, all Wylde Market's producers share a sustainable ethos, which prioritises both the planet and the quality of the food we eat.

Prime produce

In these three recipes, our chefs have let fantastic produce from Wylde Market shine. Richard Bainbridge, for example, has sourced pollock, wine vinegar, pickled mushrooms and spring onion from them for a beautifully balanced dish of incredibly crispy battered fish, a rich satay sauce and fresh cucumber salad. George Farrugia, meanwhile, raided the online farmers' market to create his amazing lamb Scotch egg, which is served with a light base of tender peas and broad beans, while Anna Tobias has poached chicken sourced from Wylde Market for a silky finish and a broth packed with flavour.

A farmers' market at our fingertips

Stunning seafood

Wylde Market first began life as a home for the UK's finest seafood. Though it has since evolved beyond that, it is still brimming with beautiful fish and shellfish, caught by eco-conscious fishermen and women around the country. Above, you can find inspiration for your own seafood cookery in our recipe collection, or, to the right, browse our favourite summer seafood recipes. And if you're interested in all things sustainability, we've spoken to chef Masaki Sugisaki about the importance of making the most of the fish we cook, from fin to gill.
