If you need any reason to visit Mexico, it's this: the country's cuisine is declared an Intangible Cultural Heritage of Humanity by UNESCO. The traditional, regional foods of the Central American country are as varied and unique as they are delicious. While inauthentic Tex-Mex fajita kits and guacamole used to be the only experiences of Mexican cuisine to be found in the UK, we're now starting to realise how special the food of Mexico is – something those in the US have known for decades.

While the country is famous for its tacos (and rightly so), each region of Mexico is home to its own micro-cuisine. Head to the frantic, busy streets of Mexico City and you'll be rewarded with a variety of mouth-watering tacos, but travel south to Oaxaca and Pueblo and you'll experience rich, deep and complex mole sauce stews. Go east to the Yucatan and enjoy incredible aguachiles, made with the freshest fish and seafood, or tuck into tortas (sandwiches) full of suckling pig, turkey and or beef.
