The Perfect Duck Breast
Cooking the perfect duck breast is as easy as 1, 2, 3...
Preheat your oven to 220ºC, Fan 200ºC, Gas Mark 7
Score the skin and season all over with salt and pepper.
Cook skin-side down in a non-stick pan, on medium heat, without oil, for 6 to 8 minutes or until golden brown. Seal the other side for 30 seconds.
Place skin-side down on a roasting tray in the middle of the oven and cook for 10 to 20 minutes, depending on how well done you like it.
