Sticky beef and hot-honey pizza with kimchi-mozzarella stuffed crust

This stuffed-crust pizza is full of gooey mozzarella and tart kimchi, and topped with sweet and sticky soy-glazed beef. It's a truly maximalist pizza – but surprisingly easy to make at home. The soft and supple dough is made with Allinson's Strong White Bread Flour. If you don't have a pizza oven, this can also be made in a regular oven preheated for an hour at its highest setting. The pizza will take about 10–15 minutes to cook.

Method

Begin by preparing the hot honey

Bring all of the spices, chillies and honey to a simmer over a medium heat, stirring frequently

Remove from the heat and stir in the apple cider vinegar and a pinch of flaky sea salt

Leave to cool then store in a jar until serving

For the pizza dough, mix the flour, yeast, sugar and salt together in a big mixing bowl

Mix the water and oil together, then stir into the dry ingredients

  • 300ml of warm water
  • 50ml of olive oil, plus extra for greasing

Tip the pizza dough onto a lightly flour-dusted surface and knead for 10 minutes (or use the dough hook attachment on your stand mixer for 5 minutes)

Lightly grease the mixing bowl with some oil

Put the dough back in, cover the bowl with a clean tea towel and leave to rise until doubled in size

Meanwhile, prepare the sticky beef

Remove the flank steak from the fridge and let it come to room temperature 

  • 500g of flank steak, finely sliced

In a large bowl whisk together the soy sauce, Worcestershire sauce, ginger, garlic, red chilli flakes and honey

Add the sesame oil to a pan over a medium-high heat 

  • 1 tbsp of sesame oil

Add in the flank steak, searing the pieces on both sides for a couple of minutes until brown

Reduce the heat to low and add in the sauce

Cook the steak with the sauce for about 10 minutes over a low heat, or until the sauce reduces to a glaze

Preheat your pizza oven for cooking the pizza

To prepare the tomato sauce,  mix together the tomato passata, chopped basil, oregano and sugar in a large bowl before seasoning to taste with salt and pepper

Once risen, divide the dough into two pieces – while you're working on one piece, keep the other one under the tea towel to stop it drying out

Roll a piece of dough out as thin as you can get it on a lightly-floured surface, then transfer it to a pizza peel dusted with semolina 

  • semolina, for dusting

Add a ring of kimchi and mozzarella strips around the dough, about 2 cm from the edge

Fold the crust over the kimchi and mozzarella, then press and seal it with your fingers

Add the tomato passata, sliced mozzarella and sticky beef to the middle of the pizza

Cook in the pizza oven for around 1 minute, turning every 10 seconds, or until bubbly and cooked through 

25

Garnish with a generous drizzle of the hot honey
