Sorrel pesto

Ingredients
- 25g of pine nuts
- 20g of Parmesan , or vegetarian hard cheese, grated
- 1/2 garlic clove , crushed
- 30g of sorrel , stalks removed
- 20g of basil
- 100ml of olive oil
- lemon juice , to taste
- salt
- pepper
Method
1
Place the nuts, cheese, garlic, herbs and olive oil in a blender and blitz until you have a course pesto

Taste and season with salt, pepper and lemon juice
