How to pan-fry scallops

Scallops – meaty morsels of sweet flesh with a hint of the sea – are the perfect fast food. These popular molluscs take no more than 4-5 minutes to pan-fry to perfection.
After you have mastered this technique why not try Adam Gray's Scallop salad with cobnuts or Richard Corrigan's Seared scallops with salsify, blood orange and brown shrimp.
