And that is exactly why we’ve created The Hot Plate – a Friday round-up of the biggest pieces of chef and restaurant news from the past week – so that you can easily stay up to date with the latest goings-on in the restaurant world. Each week we’ll be updating this page with the headlines that have caught our attention, the new opening we're most excited about and our recommendations for where you should be heading – so make sure to check back every Friday.

This week, news of the debut restaurant from a former Tom Kerridge group head chef, the UK's best local restaurants are revealed and it's all change at Shoreditch's Bistro Freddie.

This week's tidbits

New chapter for Bistro Freddie's Anna Søgaard

Bistro Freddie's head chef Anna Søgaard is leaving the restaurant after a year, she confirmed this week. The chef, previously of Manchester's Erst, oversaw the opening of the Shoreditch restaurant, which is from the team behind Spitalfields' Crispin. Anna hasn't confirmed what she's moving onto, but in the short term she'll be taking her female-led supper club Suppher to France's Marseille for its first international outing.

Nick Beardshaw unveils plans for debut restaurant in Surrey

As we revealed a few weeks ago, Nick Beardshaw is set to open his first restaurant after leaving the Tom Kerridge group, where he had worked for fourteen years, but we now have a few more details. Nick will launch Starling in his home town of Esher, in Surrey, at the end of August, serving seasonal British ingredients in a concise menu, usually with no more than five dishes per course. It will include A Moon Shaped Pool, Nick's winning fish starter from Great British Menu 2023.

Ex-Midsummer House development chef to open taqueria in Hove

Greg Clarke, the former development chef at Daniel Clifford's two-star Midsummer House in Cambridge, is set to open a Mexican restaurant called El Bolillo in Hove this September. It will focus on tacos, with hand pressed masa and flame-grilled sharing cuts in the works. The name comes from Mexican street slang meaning 'the white boy', which its website says is 'a brazen and cheeky nod to a British chef opening a taqueria'. Greg, who has previously worked with Brett Graham and Tom Aikens and headed up Hackney's Pidgin, will open El Bolillo with partner Matty Salvetti, whose background is in front of house.

Good Food Guide announces 100 Best Local Restaurants for 2024

The Good Food Guide has announced its 100 Best Local Restaurants for 2024, including its overall winner – French bistro Bavette in Leeds (which also took home the North East England award). Elsewhere, Abby Lee's Mambow was named best local restaurant in London, while the Greyhound Inn in Pettistree scooped the award for Central and East of England. Up in the North West, Cibus in Levenshulme was crowned winner, while in the South East Brighton's Med was given the honour. In the South West, it went to North Street Kitchen in Fowey, while over in Wales, Inn at the Sticks in Llansteffan won.

David O'Connor and Joe Mercer Nairne, behind Chelsea's acclaimed Medlar, have unveiled their second restaurant, Cornus in Belgravia. This week it opened its doors for a soft launch with 30% off food until August 3rd; the official opening is planned for August 6th. The kitchen is headed up by executive chef Gary Foulkes, fresh from the Michelin-starred Angler. The rooftop restaurant will serve a changing à la carte menu with British and European ingredients, underpinned by traditional French technique. Dishes will include mains of roast Landes chicken, Scottish langoustines, sweetcorn and roast chicken sauce and a sharing dish which for August will be a côte de beouf from the Butcher’s Block in Banstead. Gary will be joined in the kitchen by head pastry chef Kelly Cullen, previously of Cornerstone.

3 of the most exciting pop-ups in London right now

Phillipe Sonou is spending the next few weeks at natural wine bar and bistro Naughty Piglets in Brixton. Phillipe, who appeared on MasterChef The Professionals last year, will be there until 17th August, serving a West African-influenced menu which includes the likes of sea bream tartare, tamarind, tiger nuts and coconut water; and sirloin Chachenga with hollandaise and coffee jus.

Cavita at Seed Library

Adriana Cavita is bringing the Mexican flavours of her Marylebone restaurant Cavita to Ryan Chetiyawardana's Seed Library in Shoreditch until the end of September. The menu includes tuna tostada, tacos al pastor and baja fish taco, finishing with Mexican cornbread pan de elote. There's also a new cocktail in honour of the residency - the C.R.E.A.M. Margarita, using tequila, champagne, strawberry cream, lime, Caprelous Perry Pear and coffee leaf.

Bubbledogs at 45 Park Lane

If you haven't had the chance to try James Knappett and Sandia Chang's Bubbledogs – a gourmet hot dogs and champagne concept – now's your moment. The brand is popping up on the 45 Park Lane terrace this summer, with James and Sandia teaming up with Cut's executive chef Elliott Grover. The menu includes the likes of the Native Dog, with crispy native lobster tempura, Marie rose sauce and beluga caviar, and the Fourth of July, with a spicy barbecue sauce, coleslaw and crispy onions.
