This refreshing cocktail from Gabor Omufer, Bartender at Cinnamon Club, combines the warm, malty flavours of Genever with the caraway and aniseed notes of the Kummel Wolfschmidt, finishing with a healthy splash of tonic. A sumptuously spiced cocktail perfectly in keeping with Vivek Singh's cuisine.

Forgotten tonic

  • 25ml of Bols Genever
  • 25ml of Kummel Wolfschmidt liqueur
  • 2 drops of Bob's cardamom bitters
  • tonic water
  • ice cubes

Equipment

  • Highball glass

Method

Add enough ice cubes to reach the top of the glass. Pour over the Genever, liqueur, and cardamom bitters

  • 2 drops of Bob's cardamom bitters
  • 25ml of Kummel Wolfschmidt liqueur
  • 25ml of Bols Genever

Slowly pour in the tonic to the top and serve with a large piece of orange peel or zest
