Sweet, spiced and deep in flavour, these honey and spelt cookies are a dairy-free delight. A hint of cinnamon provides a warming aroma, which beautifully complements the nutty flavour of the spelt flour.
Preheat the oven to 190°C/gas mark 5 and line a baking tray with baking parchment

Sieve the flour, baking powder and cinnamon into a bowl and stir to combine. Add the honey and oil and stir to make a thick batter

Take a good teaspoon of batter and place it on the prepared baking tray. Repeat with the remaining batter, leaving space for each cookie to expand

Bake for 12–15 minutes, then remove from the oven and allow to cool slightly on the tray a little before transferring to a cooling rack. They will be quite soft after baking, but will firm up as they cool
