Elderflower vinegar

This elderflower vinegar recipe is one of the simplest and easiest ways to preserve the flavour of elderflowers – but the fresh, zingy and floral flavour can transform all sorts of dishes. Ensure your flowers are free of dirt and that your jars are sterilised to ensure this vinegar lasts the whole year.
Ingredients
- 3 sprigs of fresh elderflower
- 500ml of white wine vinegar
Equipment
- Muslin cloth
- Sterilised 500ml jar
Method

Inspect the elderflowers for any bugs, dead flowers or spider webs and remove

Place in a sterilised jar and cover with vinegar. Leave in a cool dark place to infuse for 2 weeks

Strain through muslin cloth and bottle the vinegar (or return to the cleaned jar). It will last indefinitely
