    You can’t get a much better duo in the world of food and drink than the head sommelier and executive chef of The Fat Duck – but that’s exactly who’s behind Trivet, the Michelin-starred restaurant Jonny Lake and Isa Bal opened after leaving Heston Blumenthal’s legendary establishment. However, rather than continuing down the Wonka-esque rabbit hole of their previous employer, the pair have shown they have much more to offer, with unique, incredibly innovative dishes that are hard to define.

    Trivet is surprisingly low-key for a restaurant with such calibre in the kitchen and wine cellar. The dining room is all wood and glass with a large open kitchen, providing laidback surroundings to enjoy some of the most genre-bending food around.

    Instead of the lengthy multi-course tasting menus usually found at this sort of restaurant, Jonny opts for an à la carte, with around five or six options for starter, main and dessert, with some snacks to kick things off. The food is inspired by Jonny’s travels all over the world, so it’s very hard to sum up the style of cooking – but there is seriously complex and thought-provoking cuisine on offer, with large nods to Italy and Japan in particular.

    The wine list is, as you might expect, a serious draw for those booking in to Trivet. Isa’s skill is unmatched in seeking out quirky lesser-known gems and you are in very safe hands when asking for a little guidance on what bottle to choose from the 350-strong list. It’s not just wine on offer; there are sakes and classic cocktails mixed with the utmost precision to sip on too.

    Trivet was one of many restaurants that opened not too long before the pandemic shut it down again, but it powered through to become one of London’s must-visit restaurants for anyone interested in clever, modern, innovative cooking.
