Comice pear infused gin and lemon thyme tonic

This autumnal twist on a gin and tonic from Paul Welburn combines flavoursome Comice pears and fragrant lemon thyme. The gin will work wonderfully in cocktails too.

Comice pear infused gin and lemon thyme tonic

Equipment

  • Water bath
  • Vacuum bags
  • Chamber sealer
  • Muslin cloth

Method

Preheat a water bath to 47°C

Place the Comice pears in a vacuum bag, add the gin and seal in a chamber sealer. Cook in the water bath for 2 hours

Leave to cool completely then pass through muslin cloth and discard the pears

Fill each glass with crushed ice, pour 50ml of gin into each glass and add a sprig of lemon thyme. Stir well and top up with tonic, garnish with slice of raw pear and serve immediately
