For the past few years the idea of visiting Singapore had been in the back of my mind, although admittedly mixed with a little bit of scepticism about the apparent sterility and rigidity of the city. That’s until I decided to go to Indonesia for a month, with a quick stopover on the island city-state. The idea of exploring the famous street food scene and to eat as much food as possible in only three days was really exciting.
Singapore is known for its street food, but you won’t find the usual open-air roadside stalls that are common in Malaysia or Thailand. Instead, you’ll find bustling ‘hawker centres’ spread over the city, packed with vendors specialising in either one or a handful of delicious regional dishes, usually for incredibly cheap prices.
So I decided to start day one like a real Singaporean with a kaya toast breakfast. A trip to Singapore would definitely not be complete without it. The simple yet strange-sounding dish is comprised of toast spread with kaya (sweetened coconut) jam, which you then dip into a soft boiled egg seasoned with soy sauce and white pepper. It sounds odd, but believe me it is truly addictive!
