The Great British cod dilemma

Cod recipes

With its flaky white flesh and subtle flavour, cod still holds the crown as the nation’s favourite fish. Once the subject of controversy regarding overfishing, there have been greater efforts in recent years to promote sustainable fishing methods - look out for MSC approved stocks when you are buying your fish.

One of cod’s best loved incarnations is as part of a fish supper, and whether battered or breaded, baked or fried this is undoubtedly a British classic. Tony Fleming’s Beer battered fish recipe is given a luxurious twist with triple-cooked chips and luxurious marrowfat mushy peas, or try Vineet Bhatia’s innovative spin on tradition with his Indian spiced battered cod recipe, served with a green pea chutney.

Andy Waters’ simple Baked cod recipe makes a quick and easy mid-week meal, or for a delicious, fresh tasting seasonal supper Mark Jordan’s Cod fillet recipe comes with Jersey Royals and a buttery chive sauce.

Cod can be a great fishy addition to picnic dishes, too, and there are plenty of portable treats to be found in this collection. Richard Corrigan puts a pescatarian spin on the traditional Scotch egg with his Smoked cod recipe, while Marcello Tully’s Brazilian street food recipe incorporates salt cod with crispy Acarajé.
